About
The vines are planted with grass and yields are very moderate. Vinification is natural, using indigenous yeasts and no inputs – almost all the cuvées have no added sulphites. Vinification takes place in vats, barrels and amphorae.
We have several grape varieties:
– Chardonnay and Sauvignon for the whites.
– Cabernet franc, Syrah, Merlot, Tannat and Abourriou for the reds.
– Muscat de Hambourg, Italia and Datetier for table grapes.
The grapes are harvested by hand in crates as they ripen. In the cellar, we work with respect for the grapes, keeping oenological inputs to a minimum. Fermentation is spontaneous, thanks to the indigenous yeasts naturally present in the grape skins.
