About
The vines have been grown organically since 1982. The full range of Gaillac grape varieties is on display. Hand-picked grapes give birth to wines naturally rich in the particularity of terroir and vintage.
Domaine de Cantalauze comprises 9 hectares of vines surrounded by woods, natural meadows, hales and organic crops, located on the Cordes plateau, a small limestone plateau backing onto the Grésigne forest massif. Since 1982, we’ve been developing biodiversity, soil life and tailor-made vineyard management: we’re experimenting with global, ecological organic farming. Cantalauze is also a human adventure, with its winemakers, its grape-pickers who harvest each vintage with their own hands, and its wine-drinkers who come together all year round.
The daily care and attention paid to the vines and their ecosystem means that spontaneous fermentation using only indigenous yeasts produces wines that are naturally rich in all the particularities of terroir and vintage. The diversity of grape varieties grown on the estate and the different methods of vinification and ageing reflect the richness of Gaillac’s heritage.
All year round, we welcome you to our cellar, built into the limestone rock and with century-old walls of the same rock, which offers a pleasant coolness in summer.
We offer tours of our vineyards to explain how we grow them, as well as of the winery, which brings together in one place the different winemaking workshops: from the reception of the harvest to the amphorae, via the cuverie and the disgorging workshop.
